Also, I know I turned up the contrast a little bit too much but OH MY GOD. They are So. Darn. Soft and fluffy and delishhh! They don’t even taste a single bit healthy at all!

Butterless Fluffy Buttermilk Pancakes

{No Butter, Gluten Free, Dairy Free, One Bowl, Small Batch, Healthy}

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1/2 cup flour
  • 1 tbsp stevia*
  • 1 1/4 tbsp baking powder
  • 1/4 tsp salt
  • 1 egg, lightly beaten
  • 1/2 - 1/4 cup water depending on egg size & preference**
  • 1 tbsp walnut oil
  • see below for optional add-ins***

Instructions

  1. In a mixing bowl, combine flour, sugar, baking powder, and salt
  2. Mix in egg, oil, then slowly incorporate water until the consistency is to your liking until just combined. (optional: mix in vinegar and extract of choice). Don’t overmix, small lumps are key to the fluff!
  3. Add in desired mix-ins and let the batter rest for 5 to 10 minutes.
  4. Grease a frying pan with butter and let preheat for 1 minute.
  5. Scoop 2 to 3 tablespoons of batter onto the pan and try to make the batter stay as thick as possible, around half an inch.
  6. When the batter starts to bubble, flip the pancake and cook until both sides are golden brown. The pancake should’ve risen quite a bit by now 😊
  7. Repeat until all batter is used up and top generously with maple syrup or nut butter!

Notes

*can replace with sugar

**someone on Pinterest suggested that 1/4 cup of water worked better for them! feel free to replace water with milk or juices 🙂

***optional ingredients:

  • 1/2 tsp apple cider vinegar for extra fluffiness!
  • 1 tsp vanilla/almond extract
  • micronutrient mix ins: cinnamon, berries, nut butter, chocolate chips, chia seeds…

  1. Um.. Where did you get your numbers btw? Because everywhere I look says even a small egg alone contains about 50 calories……

    1. Hey Jane! Thanks for stopping by– this recipe makes 10 servings (10 pancakes), so the total calorie count you’re looking for is 420 😊. I recommend substituting the egg for 4 tablespoons of whipped aquafaba (chickpea water) if you’re looking to lower the calorie count. Readers on Pinterest have enjoyed these pancakes with applesauce instead of oil too … hope that helped!

  2. Hi there! These were delicious and definitely my new favourite pancake recipe! Bit confused though, followed the measurements exactly and only made 4 pancakes (relatively small). Was that 420kcal my serving!? If so, may need to adjust the amount it makes :))

    1. Hi Daisy! I haven’t made these in a while so I’ll have to whip up a batch to confirm 😂 But yes, the entire batch is 420kcal. If you’re looking to reduce the calories, Sam Lyons from Pinterest made hers with 1tbsp of applesauce (a tenth of calories in oil) instead of oil (https://www.pinterest.com/pin/790874384544216204/activity/tried). I’m nearly satisfied with an even lower calorie pancake recipe, stay tuned ❤️
